 Yacht Chef Antigua / St Barthelemy 12/2019  M/Y Akula  Charter / Private client

This was a month gig.  First part was Antigua fo the Antigua charter boat show where I provisioned foods for the crew and brokers of the show.  I also competed in the show competition.  Next stop was to St Barths where I cooked for 4 guests, All day as well as a crew of 4.

I did a 6 day work week, in feb, with this client and he offered me a job.  I relocated to Portland for 5 months and there I was responsible for everything pertaining to food and beverage.  Various diets including, vegan, vegetarian, GF, DF, keto and sugar free. I recently relocated with the client to Tampa for the football season.  I cook for 2 people, lunch & dinner with guests frequently.

While working for this Pro boxer from the UK, while here training for a fight, I developed menus with a nutritional thought in mind.  I cooked breakfast, lunch and left dinner in the fridge.

  • Developed a bread program for the Café as well as assorted pastries for take-out.
